Modern, farmhouse, unpasteurized, vegetarian, hard cheese made from sheep's milk. It has a truckle shape with golden, crusty, natural rind. It is used as a table cheese and for grating. The cheese is based on an old-style Wensleydale. Firm, yet crumbly, it melts in the mouth, releasing the flavors of cream caramel and crushed nuts, with a citrus finish. The cheese ripens in three to six months.
