» Castelleno «
Castelleno is ewe made, hard chesse of round shape, similar to Manchego, being prepared in aceite. The cheese is soaked in olive oil that gives it a dark color. It can be eaten either fresh or matured. Castelleno cheese ranks among favourite Spanish cheeses and comes originally from the province of Leon, the largest cheesmaking region in Spain. Similar cheeses include Zamorano (from northeast of Madrid), Cadiz, Aracena or Calahora (from around Granada).
