This cheese was first made ten years ago by Anne Dorward on her own farm. Today it is produced by Dunlop Dairy. It is vegetarian, unpasteurized, hard cheese made from cow's milk. The taste is very mild and buttery, with the sweetness of fresh milk. Affinage takes six months.
