It is vegetarian, hard cheese of truckle shape made from sheep's milk. This cheese was produced by Judy Bell and her husband Nigel who are interested especially in cheeses made from sheep's milk. The production of the cheese is based on a 19th century recipe. The pâté is unpressed, moist and crumbly and it has a sweet taste. The period of curing and maturing takes eight to twelve weeks.
