This cheese has been produced by the cheesemakers, Jock and Hattie Bell, who moved from Glasgow to the remote island of Shapinsy in the Orkneys. It is vegetarian, hard cheese of cylindrical shape made from goat's milk. The taste of the cheese is sweet because of the goat's milk and has a herbaceous flavor with a hint of almonds. The period of curing and maturation takes two to eight weeks.
