Leafield is a hard, dense, chewy cheese, with a delightful medley of flavours. There is a certain fruitiness (rather like fresh pineapple) coupled with a nutty taste. It is a vegetarian, hard cheese made from sheep's milk. The fat content is 48% and maturation period lasts from three to four months. Leafield is a eheel-shaped cheese and the rind is imprinted with a pattern that resembles the tread on a nineteenth-century steam wheel.
