Vegetarian, organic, hard cheese made from cow's milk. It usually has a shape of cylinder with pale brown-gray natural rind. The cheese is firm, quite dry and the flavor suggests a nutty character and a strong, fried-onion tang on the finish. In fact, it is traditionally made clothbound Cheddar. The cheese ripens in six to nine months. It is produced by Loch Arthur Creamery and by Camphill Village Trust.
