It is said that this cheese has a very long history tracing back to the time of W. Shakespeare. It is vegetarian, fresh cheese made from ewe's milk, usually produced in the round shape. The cheese has a very soft texture and the taste is typical for the sweetness of ewe's milk. The cheese is produced with various flavors, plain, garlic and cracked peppercorn. Affinage takes only ten days and the content of fat is 45 per cent.
