What is Crozier Blue Cheese?
Crozier Blue is a pasteurized sheep's milk version of the famous Cashel Blue, made by Jane and Louis Grubb at their farm, Beechmount, near Fethard in County Tipperary. Crozier Blue is the only blue cheese made from sheep’s milk in Ireland.
The cheese has a pale white interior with greyish-green mold. The paste is chalkier towards the center of the cheese. It is very similar to Cashel Blue, but with a slightly whiter paste due to the use of sheep’s milk. The taste is rich, creamy, and mild, with a sweet blue flavor when mature. Young cheeses are crumbly with a more acidic flavor. Traditionally made in wheel shape and packaged in silver foil.
