Arnégui cheese is manufactured in Béarn which is located in the mountains of Pyrenees of southwest France. Made from ewe’s milk, it is an uncooked and pressed cheese. It has little moist orange / yellow rind and the paste is firm but elastic. It is best in spring, summer or in autumn. It offers a superb refined taste which goes good with rosy, light red or dry light white wine.
