Azeitão cheese is produced in Spain. Animal rennet is used in making the cheeses but in this cheese cardoon thistle is used. This cheese is produced in Foothills of the Arribida mountain range in Spain. It is made from ewe’s milk. You can see no or few air holes in it. The paste of this cheese gives a rich and slight salty flavour. It pairs well with salami, fruits, etc. Tempranillo or Albarino is the best combination with this cheese.
