Made from cow's milk, Alus is an impressive 'farmyard' quality cheese from Bearn province of France. Soft in consistency and mild of taste, it is uncooked, pressed, with distinctive slight holes marking its appearance. This cylindrical disc shaped cheese offers little sweet and acidic flavour. It takes 3 to 4 months for refining process with frequent wet brushings. Also known as Bethmale of Pyrénées and Oustet et Saint-Lizier. It goes good with Fitou, Corbières of Roussillon or Madiran wine.
