The cheese is made from cow’s milk, which is specially grass fed. It is categorized under artisan cheeses. The texture is similar to that of cheddar i.e. dry. It is nutty cheese, because of the intense flavours of hazelnuts and walnuts. It uses vegetarian rennet during fermentation of cheese. Made at the Sprout Creek Farm, Dutchess County NY, the farm uses rich and creamy milk from there specially grass fed cows such as Jersey, Guernsey, Milking Shorthorn and Brown Swiss. The specialty of the Barat cheese is that it is free from artificial hormones and antibiotics. Sharp in flavour and firm in texture, the Barat cheese goes well with white wines, light ales, mead and cider.
