Originating from region of Normandy in northern France, Bondard is a type of traditional Neufchatel cheese or it is a bondon cheese with more cream and longer maturing process. Made from cow's milk, this unheated cheese has an enriched cream, distinct sharp aroma and fruity flavour. It takes around 4 months to get matured. When aged, it becomes soft in consistency with some moulds on the surface. The rind is grey in colour. Small cylinder of this cheese contains about 60% fat. It goes good with Bourgueil or fullbodied red wine.
