Bonde de Gatine
A superior farm cheese produced in the Gatine (also known for its apple orchards) department of Poitou in France. The villagers are proud of the way they make this cheese. Raw goat milk curd is uncooked and unpressed. The taste has a definite acidity flavour with a soft satin like texture. It melts in the mouth very easily with pleasant aroma. It has a natural rind with soft white pate.
