An unusual small pear shaped cheese with a straw (or a vine branch) pierced through the center. Made from goat's milk, it is produced in Midi-Pyrénées region of south France. This uncooked and unpressed cheese has rind with natural mould which offers a nice wrinkled look to the cheese. It is matured for 2-4 weeks and with an extended period, it becomes more pronounced in taste. When aged, it offers a fine and soft paste with Mild, pungent flavour and extremely pleasent taste. Fat content is around 45%. Its mouth-watering taste goes good with white Gaillac, Muscadelle, Sémillon, Sauvignon or fruity red wines.
