Bouysset cheese is exclusively manufactured in Tarn department of Midi-Pyrénées region in the southwest of France. Made from raw goat's milk, it is only produced at the height of summer. This kind of Brie gets matured in 28 to 40 days. When aged, it offers creamy, buttery taste and delicate smooth flavour. The texture is soft with moulds on the surface. It can be paired with light red, fruity red, fullbodied red or dry white graves wines to taste its delicacy.
