From the Loire department of Rhone-Alps region of France, Brebicet is a smooth and creamy cheese. Made from ewe's milk and shaped into square, this cheese takes around 4 weeks to get matured. When aged, it offers spicy addictive flavour. The texture is soft with some moulds on the surface. The paste is mild and flexible which literally melts in mouth. This mild, yet savory cheese can be served with special type of breads or with dried fruits. Its delicate taste and balanced flavour matches very well with Port, Muscat, Banyuls and fruity red or dry fruity white wines.
