Brezain is a smoked raclette-style cheese from Savoie department in French Alps. Made from pasteurised cow's milk, its unique taste and colour is obtained by exposing it to the natural, hot smoke of a wood fire in a humid atmosphere in Alps. After 85 days refining process, it becomes semi-hard in texture and contains around 48% of fat. A particularly great match to salads, pizzas, and pastas or on salted pancakes. It can also be served with light red or dry light white wines.
