Brin de Paille
In French, "paille" means straw and the presentation of this cheese on a straw might have given it the name "Brin de Paille". Manufactured in Pays d'Auge area in Normandy region of northern France, Brin de Paille is a soft cheese with natural mould rind. Made from pasteurised cow's milk, it offers smooth and soft milky flavour. The fat content is around 45 %. It melts on the tongue with fabulous silky, velvety texture. It can be enjoyed with the wines like Burgundy or Beaujolais.
