Brocciu Corse is a fresh and ripened whey cheese. It is produced in Corsica which is famous for cheese making bussiness. Made from goat's and/or ewe's fresh milk. The mixture of fresh whey and milk (a maximum 35 % of the total) is burnt at the temperature between 80 to 9OC and then drained in moulds. Usually comes in a cone shape, either fresh or ripened.
