Brousse de la Vésubie
Brousse de la Vésubie is a variety of Brousses cheese which is made from ewe or goat's milk. This white, mild milk curd cheese is manufactured on the farms of Provence region located in southeastern France on the Mediterranean Sea adjacent to Italy. Production of the cheese generally continues from autumn to the beginning of spring. It can be paired with fruits, vinaigrette, herbs, garlic and chopped onions. The fat content is around 45%. This creamy and unsalted fresh cheese goes well with all white and rosy wines.
