Buche Maitre Seguin
Buche Maitre Seguin is an absolute authentic alternative to many of the goat’s milk logs (in French 'Buche') available, which are produced using frozen curds. Manufactured in Poitou-Charentes region in central western France, it is made from fresh curd in a large log. Aging process gets completed within 3 to 4 weeks. As this cheese is not wrapped, it ages well for much longer period and becomes more flavourful with the age. When matured, it offers flowery rind with white moulds and superb white paste. Also, an interior becomes chalky and flaky in texture and wonderful in flavour. The fat content is around 50% and can be eaten when young as well as matured. Buche Maitre Seguin is a true delicacy that begs for a salad and a glass of Sancerre or a fruity white wine.
