Cabecou du Perigord
Cabécou du Périgord is a semi-aged cheese manufactured in Périgord area of south-western France. Made from goat's milk, it is a small, disk shaped cheese with white, creamy and soft interior. When it is fresh, it offers creamy and sweet flavour with an intimation of milk delicacy. Flavour goes on changing with the maturity of the cheese. When aged for 15 days, blue tinges of mould covers the white rind and flavour gives the hints of hazelnut. Slice it for salads or pair it with Bergerac, Cabernet and Saint Joseph or any of the red wines.
