Cabri Ariegeois is a soft cheese exclusively produced in Pyrenees region of France. Made from goat's milk, this Vacherin Mont d'Or type cheese is best eaten when it is fresh. It is encircled by a strip of spruce bark that offers faintly subtle aroma to the cheese. When aged atleast for a month, it offers ochre colour crust with mild smell of resin and cellar. The paste is white, smooth and runny in nature and the fat content is just around 22%. The milky flavour of Cabri Ariegeois goes well with a glass of Minervois or Madiran wine.
