Cachat is a soft textured cheese with natural rind. Also known as Tomme du Mont Ventoux as it is manufactured near Mont Ventoux mountain area located in the Provence region of southern France. Made from mainly ewe's milk or sometimes goat's milk, this farmstead cheese offes a fresh white paste. It is soft and creamy in nature and contains around 45% of fat. Its sweet and delicate flavour goes well with dry fruity white or rosy wine.
