This Dutch cheese is very famous as it is a low fat (17%) cheese. Cow’s milk is used to produce this cheese. It is not to smooth or too hard in texture. After aging for 4 months, the cheese develops fine white spots of protein crystals all over the cheese. It is sharp in flavour and sweet in taste as well the salt content is around 25% less than any other cheeses.
