Caprichaud is a living cheese manufactured by Serve & Belle dairy situated at Celles-sur-Belle in Poitou-Charentes region of central western France. Made from raw goat's milk, this hand-ladled cheese takes 8-10 days to get matured. It is not wrapped and the goat flavour develops as it dries in the fridge. When aged, it offers very moderate flavour. Soft in consistency with 45% of fat content. Slice it on toast or serve it straight from the fridge with salad and bread.
