A pressed, unheated and washed rind cheese from department of Haute Garonne in the southwest of France named after the Garonne river. The department is crossed by the Garonne River for nearly 200 kilometers and the extreme south of the department lies in the Pyrenees mountain range. Made from the goat's milk, Caprinelle is produced in this beautiful high mountainous area. Aged for 5 months, it offers a white paste with waxy nature. Moist and Semi-hard in consistency. This cheese has a strong, nutty flavour and rich in taste with a long finish. Serve it with pickled beetroot, celeriac, carrot or chervil salad. Its strong flavour goes well with fruity red, fullbodied red or dry fruity white wine.
