Caprini is an air-dried cheese with a firm texture with a white rind. Made from goat’s milk. Cheese lovers appreciate its varying flavour, from mushroom to citrus, lovingly. Caprini develops on aging just like a red wine. Made in different ways in different places. In Lombardia, Caprini, is made on the farm with fresh goat’s milk from the nearby farms where the goats are left for breeding Caprini of Valsassina is famous as d'Intelvi, delle Valli Luinesi and Della Val Cuvia made in the Brianza village of Montevecchia. A delightful matured Caprini can be tasted in this region. Fresh Caprini, comes without crust, is white soft and spreadable with a delightful relish and slightly acidic savour. Develops a thin yellow-red crust and white moulds on maturity. Any type of Caprini is seasoned with oil and pepper or in perfumed under oil with laurel leaves in glass jars thus acquiring a distinct original flavour within a period of 6-8 months.
