Carre de Bonneville
Carre de Bonneville is a cheese from Normandy region in northern France. Made from cow's milk, this farmstead artisnal cheese has soft consistency with some surface moulds. Aging of the cheese is carried out in wet cellars and during the process; it is washed with salted water atleast for 2 - 3 months. When matured, it offers the distinct strong flavour. The rind is yellow, ocre in colour and washed or sometimes brushed. It contains the fat around 50%. Pair it with Bourgueil or Pomerol wine.
