Carré de Bray
Carré de Bray is a soft cheese with surface moulds. It is produced in a splendid French department of Seine-Maritime in Normandy region, which includes the chalky plateau of the Pays de Caux and the cliffs of the English Channel coast. Made from cow's milk, it is a Neufchhtel-type, small dairy cheese that matures within 2 weeks. When aged, it has a white rind and the fat content is around 45%. It tastes delicious with fruity red or fullbodied red wines.
