Ann and pat O’Farrrell make the Carrigaline Farmhouse cheese, near the town of Carrigaline, South Ireland. The Carrigaline cheese is a semi soft cheese with delicate flavour that is ripened for a minimum of 12 weeks. With age it becomes more pungent. It can be used in a cheese board or in bread. Serve at room temperature. This cheese is made in 3 varieties depending upon the flavour – garlic and herbs, natural, maple smoked. Handmade with milk from Friesian cows, vegetarian rennet is used, making it suitable for vegetarians. It is available in packages of rounds of 200gms, 400gms and 1.8kgs.
