Cerdanya is the cheese which is being found in some part of Spain. This cheese is mainly made by the pasteurised milk of cow. The aging of this cheese is about one and the half-month. It is the pressed and uncooked cheese. After aging it changes to brownish colour and becomes creamy and mild. This cheese is being available in each and every season the year. This cheese has lots of small and irregular holes in it. The texture goes on soft, having nice flavour in it. For light dishes it is being cut in cubes or slices and it tastes good too.
