Clacbitou, it is being obtained from Charolais region of Bourgogne. It is prepared from goat milk, after refining for some period, the cheese becomes smooth and white with natural rind. Fresh Clacbitou has a light sour and milky taste. The paste of Clacbitou has loose melting texture. Different formats of the same cheese produced in same region are known as "Minicalc," and "Racotin".
