Douanier, Le is a cheese that comes from the Morbiers family. Made from leftover cheese curd, is preserved in a layer of soot before adding the curd from the next batch. Ivory coloured, semi-soft and tender structured, comes with a hint of cream and hazelnut. Has a lactic odour. Should be consumed within a period of two months. Preserved in a double waxed paper of an aluminium foil between 2-4ºC. Goes well in salads or soups. Melted Douanier on croûton gives a good taste to the taste buds. Also served on the pizza pies and in the dishes of pastes.
