Echourgnac a la liqueur de noix
The cheese is the specialty of the Nuns of the Notre Dame de Bonne Espérance (Our Lady of Good Hope), which is based in l'Abbaye d'Echourgnac (Périgord region) of France. The place gives the cheese its name. When the French name of the cheese is translated it means Echourgnac Matured with nut liquor, which thus explains the process of production of cheese. Production of Echourgnac a la liqueur de noix was started in 1999, as a variant of Echourgnac cheese. Maturing process takes 2 months, during which the rind is washed with nut water, which gives it a dark brown flavour. The nuts are specially used from Périgord region. Taste is fruity, balanced and simple. But the taste becomes unique because of the nut-liqueur.
