Gjetost cheese is available in two types namely Ekte Gjetost and Ski Queen Gjetost. Ekte Gjetost cheese is produced only from goats’ milk and whey while Ski Queen Gjetost cheese is made from goat and cows’ milk. Ekte Gjetost is darker in colour and richer in flavour than Ski Queen Gjetost. In Norwegian, the word 'Ekte Gjetost' means pure goat cheese. Made from pasteurised goat's milk, it is semi-hard in consistency. It is popular among Norwegian children. This brown coloured cheese offers sweet and earthy taste. It's sweet taste and caramel flavour comes from the caramelisation of the milk under pressure. It is sold in blocks. Sliceable wafer thin slices with a cheese plane and often eaten at breakfast on toast, crisp bread or biscuits. It can be also melted into plenty of food dishes.
