Finnish squeaky literally means bread cheese, also known as Leipäjuusto. Produced in western and northern parts of Finland. This traditional cheese is made from rich milk of cow, sometimes reindeer or goat milk can also be used. In the round disk curdled milk is poured to make it 2-3 cm thick and for its distinctive brown or charred marks it is grilled or flambéed. It can be consumed warm or cold and often served with cloudberry jam. This cheese orginally comes from Ostrobothnia, here the cheese is known as juustoleipä.
