Fourme de Sauternes
The cheese gets its name from the Sauternes wine, which is used with the Fourme d'Ambert cheese for ripening. The cheese is ripened by washing and injecting it with the Sauternes wine and then matured for 2 months. It has a sweet and tangy taste. The Sauternes wine originates in the region of Bordeaux, which is very famous for its sweet wines. The cheese has a fruity taste with a smooth and creamy texture. This combination of Sauternes wine and Fourme d'Ambert cheese makes it simply delicious. The cheese is speciality of Jacquy Cange who has mastered the art preparing new cheeses and creating affinage for each. His discoveries are finding Belgian and French farm cheeses and introducing new ingredients in them and creating new variety of cheeses from them.
