Fromage du Cure
Also known as Cure Nantais or Nantais, Fromage du Cure is a small, sticky, washed-rind cheese with a creamy interior. A monk who was fleeing from the French Revolution brought Fromage du Cure into Brittany, which previously lacked cheese. It is made from the cow's milk and the aging process is carried out for one month. When aged, the rind is smooth and wet, the pate golden and supple, with a few small holes. It has a smoky-bacon taste and offers spicy finish. The Fat content is around 40 % and the texture is soft. Pair it with Muscadet or Coteaux d' Ancenis wine.
