Hoch Ybrig is the cheese which is only made in the season of summer in Ybergeregg, Switzerland. This cheese is from Alpage family of cheeses. This cheese is being washed in white wine brine while preparation. In Zurich, Affineur Rolf Beeler uses to age this cheese. Its texture is some what granular and it is flavoured nuttiest. It tastes well with the Riesling wine.
