Finely grained, Hokonui is a delicate cheese with a marshmallow- like texture. The coating of the white mould helps in breaking the curd thus changing its texture and making the flavour more prominent. Made from sheep’s milk. Usually served with combination of apple, pear and walnut. Crumble Hokonui on the pastas or eat with the roasted vegetables. Often enjoyed with Savignon Blanc, Riesling, Pinot Gris and Rosé.
