L’lle d’Yeu comes from a charming island of the coast of the Vendée. According to a legend, this island was at one time attached to the mainland by a bridge. The cheese has a form of cone with a concave top and bottom. The rind is sprinkled in wood ash. It has a salty taste which comes from grasses that are exposed throughout the year to salty air of the sea. It has a refreshing and fortifying savor and tastes delicious with Muscadet wine.
