Juniper Grove Otentique
From the cheese maker Pierre Kolisch, Juniper Grove Otentique is an American cheese created with European style. Made from goat's milk, it is produced in the Juniper Grove farm located in the sunny, high desert of Central Oregon. Goats of this farm are fed on the plains of Central Oregon, which is rich with fresh air and clean water. The yield milk is little mild and has a creamy and vegetal hint. So after the maturation period of 10 weeks, cheese offers mild and slightly chalky taste. This mold-ripened cheese has natural, wrinkled rind with pleasantly dry texture. Mildest of all Juniper Grove mold ripened cheeses, Otentique goes good with Sauvignon Blanc wine.
