Maja Binder, in Count Kerry makes Kilcummin cheese on a self contained farm. Made from unpasteurised cow’s milk, its taste is yeasty, salty, pleasant and minerally. It is a hard type of cheese but its texture is firm but moist. It’s a vegetarian cheese. There are many type of varieties in this cheese such as semi-hard plain Kilcummin and mild and creamy Kilcummin Pepper.
