Le Berger de Rocastin
Le Berger de Rocastin or just Berger de Rocastin is a soft-ripened cheese. It is a part of Brie family but slightly spicy and earthier than authentic Brie. Made from the ewe's milk, this cheese gets ripened within just 2 weeks. It is soft in consistency, rectangular shaped with molds on the surface. The rind is flowery white and the interior is smooth and buttery. This silky, smooth and velvety cheese is lusciously rich in taste. Have it with fresh baguette, sandwich or meat. It can be also tasted with fresh fruit and the wines like Beaujolais, red Burgundy and Bordeaux.
