From the mountains of Pyrenées, Le Moulis is French cheese produced in the range of mountains in French Pyrénées. This range of mountains is a natural border between France and Spain and it is famous for the production of delightful sheep's milk cheeses. However Le Moulis is a rare cheese made from cow's milk in the area. During the first two weeks of production process, it is washed with brine on every alternate day. Then after brushing, it is left to mature for two months. When matured, it offers a characteristic earthiness with mild and deep flavour. It has a straw coloured rustic natural rind with the cloth marks used during production and nutty, eggy aroma when young. This semi-soft and moist cheese can be enjoyed with the wines such as Cabernet Sauvignon, Merlot and Port.
