Liptov cheese is also known as Liptauer. Its takes its name from the German word for the region of Liptov (Liptau in German) in Slovakia. Liptauer is made from bryndza cheese. Bryndza is a salty sheep’s milk cheese from Slovakia. After sieving the bryndza cheese, same quantity of soft butter is added into it. Then finely chopped pepper, paprika, caraway, capers, mustard, chives and salt is added to the mixture. After mixing well, it is served with many dishes. It is consumed and served with different style in different countries. In the province of Trieste in Italy, the cheese is also known as Spuma di formaggio all'ungherese. It is also used in Hungarian and Austrian cuisine.
