Manteiga cheese is mainly produced in northeastern Bahia, Ceara, Paraiba states of Brazil. It is liked by almost all Brazilians. Queijo de Coalho curd and Garrafa butter is used in preparation process of this cheese. This cheese is salty in taste and oily in flavour. Colour of this cheese is yellowish. The aging period of this cheese is about 50 to 60 days. It is found practically everywhere in Brazil and the production of this cheese is principally a family tradition.
